After a gentle pressing in pneumatic press, slow fermentation with natural yeasts happens in temperature-controlled stainless steel vats. Half of the wine is sent to 600L oak barrels to age, the
other half remains in stainless-steel vats on fine lees. After 12 months, the wine is blended back together, filtered lightly and bottled.
This wine combines the richness and elegance of Pouilly-Vinzelles with the classic freshness of Mâcon. Aromas of yellow fruits such as apricot and peach, textured and round on the palate and balanced by a refreshing acidity.
